Easy Peasy Chicken

I live alone, well Purl, my cat, is here, but we don't share meals. This is an easy, no attention needed chicken recipe that is great for one person or many. Change the seasonings and savor another international cuisine.

Ingredients
  1. chicken thighs with skin on or other chicken parts
  2. onion, sliced
  3. garlic, chopped finely
  4. carrots, 3 inch pieces
  5. mushrooms, sliced
  6. salt
  7. pepper
  8. garam masala
Instructions
  1. In Dutch oven, sauté the onions in coconut oil, or fat of choice, until soft. Rub chicken with a mixture of salt, garam masala, and pepper. Add chicken to onions and cook until browned (unless you are using breast meat). Add garlic and cook briefly. Add the carrots, celery, and mushrooms, on top of meat. Cover tightly and cook over low to medium heat until meat and carrots are done.
Notes
  1. Optional: I've not done this, but you could add potatoes, turnips, rutabagas, or other veggies at the beginning.
  2. My favorite: Add curry paste or powder to the pot. At the very end add spinach and/or green peas. Just before serving, stir in coconut milk (or cream) and heat through. With more milk, this resembles soup.
